La scorza 👉🏻 il Nero Pregiato è inizia a essere cavato adesso, perciò ha un peridio più sottile, mentre l’Uncinato assomiglia un po’ allo Scorzone.

But what’s the difference between the two? Cristiano gives us the run down 👇🏻

The peridium 👉🏻 the Perigord Black Truffle is just starting to be harvested, so it has a thinner outer layer, while the Burgundy Black Truffle is somewhat similar to the Scorzone.
The scent 👉🏻 the Burgundy recalls the soil and honey, while the Perigord Truffle has notes of chocolate, tobacco, and leather.
The size 👉🏻 at this time of the season, the Burgundy is larger. But did you listen to what Cristiano said?

In primis, dipende dal tartufo: bianco o nero?

🖤 Il tartufo nero si apprezza di più se grattugiato e in cottura, ed è sempre consigliabile una quantità abbondante.

🤍 Il tartufo bianco viene esaltato direttamente dal calore del piatto ed è sufficiente affettarlo. Anche un tartufo di pezzatura più piccola sarà abbastanza per un buon tagliolino!

First of all, it depends on the truffle: white or black?

🖤 Black truffle is best appreciated when grated and slightly cooked – it’s always recommended to add a generous amount.

🤍 White truffle is enhanced by the heat of the dish itself, so it’s enough to serve it in thin slices, a final touch. Even a small truffle may be enough for a good tagliolino!

🐶 Probabilmente già sai che esistono comandi basici, come “seduto” o “zampa”. Sono però altre le espressioni che potresti sentire da un tartufaio nel bosco. 👇

🔸 “Dooov’è?” 👉 detto con tono enfatico, è usato per incitare il cane alla ricerca e all’individuazione del tartufo.

🔸 “Dai, dai, dai!” 👉 nel caso in cui il segugio si distragga e deve essere spronato dal tartufaio a concentrarsi di nuovo sull’obiettivo.

Naturalmente, è fondamentale educare i cuccioli a trovare il tartufo (e anche a non mangiarlo)! Per questo, Luca premia sempre i Lagotti con un biscottino goloso 😋

🗣️ Have you ever thought about how communication works between a dog and a truffle hunter?

🐶 You probably already know the basic commands, like "sit" or "paw". However, there are other expressions you might hear from a truffle hunter in the woods. 👇

🔸 "Dooov’è?" 👉 said with an emphatic tone, it’s used to encourage the dog to search for and locate the truffle.

🔸 "Dai, dai, dai!" 👉 while this command sounds quite worrisome, it translates to “come on, come on, come on!”, and it’s used when the hound gets distracted. This is the truffle hunter’s way of urging it to refocus on the task at hand.

Of course, it’s essential to train the pups to find the truffles (and not eat them)! That’s why Luca always rewards the Lagottos with a tasty treat. 😋

🌳 In the woods, our truffle hunters aren’t alone in the hunt for this precious (and delicious) gem. Sometimes, they’re even preceded by some competitors, like snails!

🐌 Yes, that’s right – snails love the best truffles. Once they find them, they eat through the pulp, leaving behind a distinct trace: a perfectly round hole, just like a little tunnel.

Subito prima di utilizzare il tartufo, è necessario eliminare la patina terrosa che ricopre il peridio, senza danneggiarlo. Ma come si fa? 🤔

🪥 Se non hai ancora la spazzola Savini Tartufi, non preoccuparti: a casa potrai usare uno spazzolino da denti. Una volta inumidite le setole, strofina con energia fino alla pulizia completa e poi tampona fino ad asciugare - un tovagliolo di carta andrà benissimo!

⚠️ Fai attenzione però: mentre il peridio verrucoso del tartufo nero lo rende più resistente, con il tartufo bianco serve molta più gentilezza!

Right before using a truffle, it’s essential to remove the earthy layer covering the peridium, without damaging the surface. But how? 🤔

🪥 If you don’t have a Savini Tartufi brush yet, don’t worry: you can use a toothbrush at home. Once the bristles are damp, scrub vigorously until completely clean, then pat dry—a paper towel works perfectly!

⚠️ Be careful though: while the diamond-like peridium of the black truffle makes it more resilient, the white truffle requires a more gentle care!
